Mom friendly kiddie Lunches

From Jr. high all the way through college I babysat A LOT! I loved it. I was pretty good at it too…not to mention I was homeschooled and the homeschool girl is the coveted babysitter! Their home…ALL DAY so if you find yourself a faithful little homeschooler, you’re a free woman! There are endless possibilities at any time. Target at noon? Sure, I’ve got a homeschooled babysitter! Dinner and a movie? We won’t be home until after 1? No problem, our babysitter is homeschooled! Coffee with a friend at 9:30? I’m there, after my homeschooled babysitter gets here! All joking aside, I did love it and many of those kids I babysat  I now follow on Facebook and instagram. It makes me feel old but it is so good to see how they have grown.

One of the families I babysat for, one of my very favorites, kept me on my toes! I started babysitting for them when I was about 15. They had 4 children. Most importantly, 4 boys! There was about 6 years between the oldest and the youngest but get this…the youngest were TWINS! Fun times. I honestly don’t remember any of them being difficult, I just remember being so tired after I left. One time when I came, their mom looked so frustrated and exhausted. She was the kind of woman that if you met her you just knew she had boys. She made a great boy mom. As I walked in, she greeted me and then preceded to explain why there were locks at the tops of the bedroom and bathroom doors. They had installed them over the weekend. I guess the twins had conspired together, snuck into the bathroom and flooded the whole room…in minutes! I don’t remember how they did it but I still laugh at that scene. Yup, one of my favorite families to babysit for! (I have not found them on social media so Mr. or Mrs. Morris…if you’re reading this…send me a friend invite!!)

Why in the world did I choose to take your time reading a blog about people I babysat for? Because these boys had a dad and their dad taught me how to make something that I want to share with you today. Ah, ok, food! Maybe I’ve got your attention a little! One night Craig ( I think that was his name…maybe karl?Kurt? ) offered to make the boys dinner while his wife got ready for their date. I was there so of course I offered to help out. He made them what he called “Torpedoes”. I had never heard of them before but they seemed easy enough and I ended up making them many times after that night. The kids loved them. The cool thing is they are good for adults also. I still enjoy them. So many lunches for kids just aren’t exciting for us moms at all. Most of the things I serve the kids just isn’t enough to carry me through until dinner. I have a large appetite but still, I need more.
I had forgotten about these until about a week ago when I didn’t have anything in the fridge for lunch and I was going to have to get creative. I noticed I had all the ingredients for the Torpedoes and got really excited to share my Babysitting recipe with my own kids.
So, what I had was shredded cheese, Pepperoni, and tortillas. Simple enough, right?

First of all, preheat your oven to 350 degrees

You take the tortilla and sprinkle on the cheese. I like to sprinkle the Italian cheese first and then put some cheddar on top of the pepperoni. Anything you want just make sure you have cheese and pepperoni!

Now you are going to roll them tight. Don’t roll the ends like a burrito.  Just roll the whole tortilla. Now place these “Torpedoes” on a pan the you have greased.  Time to put these babies in the oven. They will need to cook for 10 minutes.  Still, very easy!

While you are waiting you can whip together my favorite part.  I made this one up on my own! I thought, what are these missing?  DIP!  I need something to dip them in, so I came up with this.

Two ingredients: Pizza sauce and Ranch!  What’s not to like? I mix 5 tablespoons of the Pizza sauce with 2 tablespoons of the ranch. You may need more or less but basically you just want to keep the same ratio. It is very good and my dip loving Ember was literally eating it with a spoon!

The girls were so excited as soon as they saw all of the ingredients. Ember was especially thrilled about the dip. Give that girl anything with ranch and she is a fan!

Torpedoes were a big hit with the girls and yours truly! Sadly I only got one half because both of my little piglets wanted more.  Next time I will know to make enough for everyone to have seconds.  Here are my little pretties enjoying every bite. Please don’t judge me for Ember’s hair. It does that all by itself! 😉


Pizza Torpedoes 

What you’ll need:

  • Shredded cheese (cheddar and Italian or mozzarella)
  • Pepperoni
  • Tortillas

Sprinkle desired amount of cheese on tortilla. Place desired amount of Pepperoni on top of cheese. Sprinkle more cheese on top of the pepperoni. Roll the tortillas firmly and place on a greased cookie sheet. Cook at 350 for 10 minutes. Enjoy!


Marinara Ranch Dip

 What you’ll need:

  • Marinara or Pizza sauce
  • Ranch dressing

Stir together 5 tablespoons of the sauce with 2 tablespoons of the ranch dressing. Serve cold or at room temperature.
